He’s on the point counting Weight-Watchers diet. Would like to do a proper birthday cake, but obviously he needs to be able to count points.

Ingredients
1 sprays cooking spray
1 3/4 cup all-purpose flour
1 1/4 cup packed light brown sugar
3/4 cup unsweetened cocoa, powder
1/2 cup sugar, granulated
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/4 tsp table salt
1 1/4 cup fat-free skim milk
3 large egg white(s)
2 Tbsp light butter, melted
1 1/2 tsp vanilla extract
1 cup water, boiling
1 Tbsp powdered sugar
Instructions
Preheat oven to 350ºF. Coat a 9 X 13-inch baking pan with cooking spray.
In a large bowl, combine flour, brown sugar, cocoa powder, granulated sugar, baking powder, baking soda and salt; mix well with a fork to combine.
In another large mixing bowl, combine milk, egg whites, melted butter and vanilla. Using an electric mixer, mix on low speed until blended; gradually beat in boiling water.
Gradually add flour mixture to milk mixture and mix on low speed until blended. Pour batter into prepared pan and bake until a wooden toothpick inserted in center comes out clean, about 25 minutes. Cool cake in pan, on a wire rack.
Sift powdered sugar over cooled cake before cutting into 12 pieces. Yields 1 piece per serving.
Notes
This moist cake is so rich and wonderful that there’s no need for icing. And since we’ve swapped egg whites for eggs, light butter for regular butter and skim milk for whole milk, you can enjoy this winner guilt-free.
Angel Food cake is just about the only cake that’s low in calorie intake. You could go and buy one at a bakery and make some easy powdered sugar glaze and decorate with some of his favorite fruits. A easy cake glaze to make is to take 1/2 box of powdered sugar and add enough milk and what ever flavoring (vanilla, lemon, almond, etc. until it is thin enough to drizzle over cake. You can use some food coloring also if you want your cake his favorite color. Good luck.
My mother was on that diet last year and you can have one day of a simple slurge honestly. But I do understand that he wants to honour his diet soooo…
ASK HIM WHAT HE LIKES FIRST!
Once you have done that then you can start looking into possible recipes. I mean whats the point in making a carrot cake if he’s going to hate it and not eat it all together [after all it is his birthday]
If he attends the once a week sessions perhaps you can goto his diet coach and ask them what they suggest.. Or better yet. Goto the Weight watchers website I’m sure they have recipes for that=)
If all else fails just shop around reading all the calories in cake mixs and icings and granted WW is getting into everything these days [with their own line of breads, candy etc] they probably have their own cakes mixes in the grocery stores.

I don’t know if this is weight watchers, but I had a friend make a chocolate cake with just cake mix, canned pumpkin, and a little water and it was GREAT! Very moist and fat free! No dairy, no eggs!
Frosted Carrot Cake
We’ve recreated the ever-popular carrot cake, down to the cream cheese frosting, in a newer, lighter version for your whole family to enjoy.
Makes 8 Servings
3/4 cup all-purpose flour
1/2 cup uncooked yellow cornmeal
1 1/2 teaspoons double-acting baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/2 cup thawed frozen apple juice concentrate
1 large egg
1/4 cup skim milk
2 tablespoons + 2 teaspoons vegetable oil
2 tablespoons firmly packed dark brown sugar
1 cup shredded carrots
1/2 cup golden raisins
1/2 cup light cream cheese
1 tablespoon honey
Preheat oven to 375oF. Spray a 9″ Bundt pan with nonstick cooking spray. In medium bowl, combine flour, cornmeal, baking powder, cinnamon, salt and ginger; set aside. In medium bowl, beat together apple juice concentrate, egg, milk, oil and brown sugar; stir in carrots and raisins. Gradually add flour mixture, stirring just until combined. Scrape batter evenly into prepared pan. Bake 35-40 minutes, until toothpick inserted in center comes out clean. Transfer pan to rack; let cool completely. Meanwhile, to prepare frosting, in food processor or blender, combine cream cheese and honey; process until smooth. Invert cake onto serving platter; spread cream cheese mixture evenly over top and sides. Cut cake into 8 equal pieces.
EACH SERVING PROVIDES: 1 Fat, 1 Fruit, 1/4 Vegetable, 1 Bread, 60 Optional Calories
PER SERVING: 243 Calories, 5 g Protein, 8 g Fat, 39 g Carbohydrate, 263 mg Sodium, 34 mg Cholesterol, 2 g Dietary Fiber

1 can crushed pineapple in water mixed with one packet fat free pudding mix(vanilla) than add tub of Fat free cool-whip
Slice cake into 2 layers, put stuff between and all over.
