Chicken and Vegetable Curry

Ingredients

 

  • 2 tbsp. olive oil
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1 tsp. crushed chili
  • ½ tsp. turmeric
  • 2 tbsp. lemon juice
  • 600 g butternut, diced
  • 700 g skinless chicken filet, cut into 2 cm cubes
  • 300 g carrots, thickly sliced
  • 600 g potatoes, diced
  • 200 g green beans, cut into 2 cm pieces
  • 500 g red sweet potatoes, diced
  • a pinch of salt

 

Steps

 

  1. Heat the olive oil in a large pot. Fry cumin and coriander for approximately one minute, continuously stirring. Then add the turmeric, chili and lemon juice and mix them in well.
  2. Add the chicken filet and roast it briefly until it is slightly brown.
  3. Add the vegetables and mix everything well. Close the lid and roast for 20-30 minutes until the vegetables are just soft and the chicken is done. Stir frequently to prevent burning.
  4. Season with salt and serve.

 

What makes this a weight loss recipe? Why is it so healthy?

 

  • It contains little fat. Good quality chicken is naturally lower in fat than beef or pork, and when the skin is removed it’s an excellent diet food. Also, almost no fat is added in the cooking process, and this little bit is healthy olive oil.
  • The starchy foods this curry contains (potatoes) are high in complex carbohydrates. This type of food fills you quickly and gives you constant energy for quite some time, preventing overeating and sudden hunger attacks that make you grab unhealthy foods. And unlike the simple carbohydrates in white rice or pasta, they are not likely to be stored as fat.
  • It includes a large portion of various vegetables, providing you with different vitamins and minerals as well as fiber. This will help keeping you healthy and fill your stomach with fairly few calories.
