How Do I Keep The Weight Off After Finishing My Diet?

Once I’ve reached my goal, should I try to lose another 5 or so pounds so that if I gain back that 5 pounds once I finish my diet and am at my goal?
If I eat a pb&j on 1 piece of wheat bread with a serving size of both pb&j, will I gain weight even though it’s a smaller portion? Same thing with pizza. If I have 1 piece instead of 2, will this make me gain weight just because it’s unhealthy?
If I start exercising and burning at least 500 calories a day through exercise alone, but eat some unhealthy foods once I finish my diet, will I gain the weight back?
