Need Ideas For A Dinner Party. Hubby And I Just Started A Fitness Plan And I Would Like A Good Menu?

Not salad or diet food but something not too heavy for our reward day. We are having guest over. 8 to 10 people. Decent kitchen skills.

    How about plan a seven course dinner. The portions are usually small and sorbet is served in between course in order to clean the palate, given hidden treats throughtout the dinner. This is good if you have guest who have good conversation and time.

    HAVE A VEGETARIAN PIZZA WITH A BIG GLASS OF COLD COLD WATER THAT MUST DO.AND FOR THE CAKE WELL GET MUFFIN WITH A CANDLE.HAPPY BIRTHDAY BOY WHA HO…………..HUM.

    Serve beef and chicken kabobs with veggies as well
    Serve over rice
    Nice bread
    Tossed Salad

    Appetisers: chips and salsa, a selection of crackers and 3-5 different cheeses
    Soup: Chilled Cucumber
    Dinner, chicken or seafood Enchaladas with Spanish Rice
    Deserts: Balled Melon with chopped mint
    Angelfood cake w/ fresh strawberries
    This is a menu that allows for those watching calories and also lets those with more hearty apetite feel satisfied.

    I would start with an antipasto tray that has a lot of lean proteins in it as well as veggies and a few hard cheeses. Leave out the crackers.
    I would serve a filet of salmon. My favorite way it to completely encase it in a homemade foil packet on top of a baking sheet. Slice 2 onions and 2 fresh lemons in to thin slices and arrange on top of the salmon filet. Sprinkle with fresh ground pepper and a light sprinkling of dark brown sugar (adds minimal calories, but a ton of flavor). You could also add fresh chopped garlic if you like. Then, bake it in the oven for about 45 mins. The onions and lemons wilt and basically steam the salmon. Then, you serve it with the beautifully carmelized onions and lemons on top. Easy and gorgeous!
    I like to serve this with fresh asparagus with a light lemony sauce I make on the stove and baby red potatoes or couscous or mashed sweet potatoes, all add color, texture and visual interest.
    Follow with a coffee/tea service and a scoop of low-fat frozen yogurt with a homemade strawberry, rhubarb, blueberry or raspberry fruit sauce made on the stove.

    What about soy meats as my brother is into healthy foods and that is a must and lots of veggies cut into cute shapes and a diet drinks are heavenly….Good Luck

    How about chicken and beef kabobs? You can use skinless, boneless chicken and marinate it in low fat Italian dressing. Get a sirloin roast and cut it in chunks for marinating and soak it for a while in low fat/low carb french dressing. It’s really good. The french dressing makes the beef so delicious.
    Also have kebobs of different veggies you can grill. Dont’ forget to pre-cook the vegs. that are hard so they get nice and done on the grill.
    Add a loaf of good bread, maybe a dessert?
    Have some great bread (it IS reward day after all!) and for dessert

    Check out “Semi-Homemade” on foodtv.com. There’s a drop-down menu on that site that lets you go to the pages for specific shows.
    On Semi-Homemade, Sandra Lee made salmon with herbs that looked really good! And salmon would be good for guests, not too frou frou but not exactly hot dogs either.
    I love roasted brussel sprouts and couscous as side dishes.

    Depending on where you live, you could do kabobs with a large variety of choices. You could have meats, veggies, and fruits. You could also cook a wok dinner.
