		<description>I would start with an antipasto tray that has a lot of lean proteins in it as well as veggies and a few hard cheeses. Leave out the crackers.
I would serve a filet of salmon. My favorite way it to completely encase it in a homemade foil packet on top of a baking sheet. Slice 2 onions and 2 fresh lemons in to thin slices and arrange on top of the salmon filet. Sprinkle with fresh ground pepper and a light sprinkling of dark brown sugar (adds minimal calories, but a ton of flavor). You could also add fresh chopped garlic if you like. Then, bake it in the oven for about 45 mins. The onions and lemons wilt and basically steam the salmon. Then, you serve it with the beautifully carmelized onions and lemons on top. Easy and gorgeous!
I like to serve this with fresh asparagus with a light lemony sauce I make on the stove and baby red potatoes or couscous or mashed sweet potatoes, all add color, texture and visual interest.
Follow with a coffee/tea service and a scoop of low-fat frozen yogurt with a homemade strawberry, rhubarb, blueberry or raspberry fruit sauce made on the stove.</description>
